Introduction
Sucrase, which also called Invertase, fructofuranosidase (EC 3.2.1.26), it is derived from the strain of brewers' yeast. It is a kind of food enzyme extracted from deep fermentation of liquid. It can be used as a food additive, also as a biocatalyst in food, beverage, alcohol fermentation, pharmaceutical preparations and other fields.
Sucrase is a digestive enzyme that catalyzes the hydrolysis of sucrose to its subunits fructose and glucose.
We use the Aspergillus Niger high yield bacterium to refine after the deep fermentation. If we use this product to produce FOS, the conversion rate could achieve 56%-59%.

pH Range: The optimum pH range is 4.5-5.5;

Effects of metal ions and others on enzyme activity: EDTA has an active effect on enzymes.

Usage Method: Add 250g Sucrase into 1MT Sucrose syrup(70%, 50°C), which will be completely dehydrated within 12 hours.
 

Application Field
Sucrose is used to hydrolyzed sucrose to produce invert syrup which containing 1:1 ratio of glucose and fructose. The invert syrup could inhibit sucrose crystallization and improve sweetness, enhancing food taste, flavor and color.

Storage
Storage at room temperature or low temperature(4-10°C) preservation, should avoid sunlight exposure. The warehouse should be kept clean, cool and dry.
